The fresh vanilla fruits have no scent. Its characteristic aroma comes from enzymatic action during curing. The traditional way to produce it begins with the beans to a process of nightly sweating and daily exposure to the sun for 10 days until those beans become deep chocolate brown in color. Then, dry them under a shade for another 4 to 5 month. Vanilla syrup is commonly used on desserts, coffees/teas, and even cocktails.
